Vegetables with Curry

This recipe shows how easy is to eat healthy and tasty at the same time.

Ingredients:
20 gr. butter
200 gr. chopped onion
15 gr. chopped garlic
6 gr. curry powder
200 gr. chopped bell pepper
crushed chili or cayenne
1 gr. (2 leaves) bay leaf
250 gr. soaked chickpeas the night before
300 gr. chopped tomatoes
175 ml. water
200 gr. chopped carrots
200 gr. chopped apple
50 gr. raisins
20 gr. dried shredded coconut

Process:

Sauté the onion and garlic in butter, when they begin to change color add the curry, fry a little.

Add the pepper and simmer for 15 min. to brown.

Add the chili, bay leaf, raisins and coconut, stir.

Add the chickpeas and tomatoes, cook for 10 min. or until the tomatoes begin to release their juices.

Add water, cover and simmer for 45 minutes.

Add carrots, season and simmer another 20 min.

Add the apple and cook for 10 min. more.

Can be accompanied with white rice.
