Glycogen:the extra fuel. Its importance for the body
Glycogen is a polysaccharide that consists of glucose molecules linked together to form long and highly branched chains which are stored by the liver and the muscles. Unlike starch, which is abundant in grains and other high carbs foods, this polysaccharide is undetectable in meats because it breaks down rapidly, and is a fuel less abundant than fat. When you have just eaten, blood sugar rises and the pancreas releases insulin to transport it to the cells, who will transform it into energy for working when it is demanded by the body. To do this, the pancreas will release a hormone called glucagon which signals specific enzymes to break down the polysaccharide into glucose molecules that go in to the bloodstream and then to the cells again. How long will this energy molecules last, depends on factors like: how much time has passed since last meal and how much activity has the person made and with what intensity.
